About the Chablis Wine Region of Burgundy, France
Date: September 13, 2010
General Information
Burgundy is a long, narrow wine region in eastern France, southeast of Paris. It consists of five major districts: Chablis, Cote d’Or, Cote Chalonnaise, Maconnais and Beaujolais.
Chablis, the most northerly district, has won a world reputation for the elegance and fruitiness of its great dry white wines, the most famous and most imitated white wine in the world. Chardonnay is the only grape allowed here.
Chablis derives its characteristics both from the northerly climate, which encourages high acidity, and from the chalky limestone soils on which the best grapes are grown. The weather has a particularly strong effect on the wines of Chablis: spring frosts, too cool or too warm years, rain.
Nowadays, producers make Chablis in three different styles. Some growers retain traditional methods of aging the wine in old oak barrels; others vinify and age solely in stainless steel; and a few make use of new oak barrels.
The wines from Chablis are classified as in the rest of Burgundy. The top vineyard sites are designated “grand cru”, the next best “premier cru”, and then come the wines of the basic appellation Chablis and Petit Chablis.
