Gavi is a town in the Piedmont area of Italy. Due North of Genoa, it has a long history providing both Genoa and the famed Italian Ligurian Coast with an excellent white wine to pair with locally caught seafood. The varietal that is prevalent in Gavi and is used to produce this wine is Cortese, a grape that has been cultivated locally since at least the 1600s. Cortese is a grape that is planted in other areas of Piedmont and Italy, but is known for achieving its full ripeness in the microclimate surrounding Gavi. Cortese di Gavi is of moderate acidity and it’s light overtones of Italian plum and lime cause it to be an excellent choice to serve with fish that’s flavor might otherwise be overwhelmed. The wine’s color is a clear light yellow. The bouquet tends towards fruitiness with a pungent apple aroma.
