After the catastrophic eruption (1650 BC) that covered Santorini in lava, ash and pumice, the island reached the optimun to produce a very distinctive wine.
The major vineyard is the Assyrtiko, that produces an excellent dry white wine ideal for desserts. Santorini’s traditional wine is, indeed, the Assyrtiko.
Vineyards are cultivated in round “basket” shaped vines in order to protect the soft and tender grape leaves from being damaged by the island’s strong wind and sand.
Despite the burning heat during the summer, the quality of farming is guaranteed by a good supply of water thanks to the nightly sea mist and fresh winds blowing from the north.
White wines in Santorini are definitely dry, with a grapefruit flavour, and, thanks to the volcanic origins of the ground, a bit smoked and sparkling.
The major dessert wine is the so called Vinsanto. It can be very sweet by its own nature, it spends at least 2 years in barrique and it distingueshes itself by a velvety taste with a blend of crème brûlée, chocolate and dried apricot flavour.
